The Love Fruit


Heaven on a plate; a pretty Royal Albert plate of course!

A nest of home-made meringue, filled with freshly made passionfruit and lemon butter, topped with hand-whipped cream set upon a bed of seeded passionfruit. If this doesn't 'swoon' you, then nothing will.

Passionfruit Butter

Place finely chopped rind of one lemon into a mixing bowl. Add 110gm caster sugar and 3 fresh egg yolks (the fresher the better and better still if not refrigerated).  Beat with whisk for about 3-4mins. Add 70gm passionfruit juice combined with some passionfruit seeds.  Also add 50gm freshly squeezed lemon juice. Beat 1min.

Place over pan of simmering water; stir regularly for about 12-15mins till mixture thickens. Remove from heat. Whisk or beat in 110gm unsalted or reduced salt butter. Pour into jars - 2 medium should do it.
Seal immediately; refrigerate; will easily last for up to 2 weeks in fridge.

It's lovely to see your beautiful pudding. Passionfruit has one of the most beguiling flavours and I adore it in a butter.     1. Well halloooo right back atcha! Thanks for touching base Debora. Last year we bought an 11,000acre property in western Queensland and we received major damage during the recent heavy floods early Feb. I’m on the place at the moment supporting my menfolk and can’t say when I’ll be home back on the coast. Internet connection is dodgy out here to say the least, so I’ll be sure to peruse Lickedspoon thoroughly upon my return. It’s great to see you back in blogland………till then. Mariana xx
